THE REDSDALE HOTEL

 

The project involved the complete restoration and renovation of a historic 100-year-old bluestone hotel, including various outbuildings and extensive landscaping works. The main building had not been touched for over 20 years. Working within the clients brief, 5 distinct zones emerged. First the dining room was redesigned to enlarge and to open the space for diners in a more functional way. Designer furniture to reflect the new contempory gastro pub menu and extensive local wine list was introduced.

 

The second zone is the front bar; it was completely restored whilst importantly maintaining the original Aussie pub feel.

 

The third zone was the commercial kitchen, it was redesigned to include various new appliances, for flow and function to facilitate the new style of food served. Various weatherboard out rooms were converted into, dry rooms, staff quarters and offices. A partly dilapidated bluestone outbuilding was rebuilt and restored to provide a private dining/wine tasting room that included a floor to ceiling window's at one end opening through French doors that lead to a purpose built amphitheatre for music, weddings and various events.



Adjacent to the amphitheatre is a 2-story bluestone barn that was converted into wine storage and cellar room. At the front of this landscaper Phillip Stray hand built a dry stone bluestone wall from left over stone from the outbuildings that created as a visual step and used for seating around the formal lawn that is used for outdoor dining and events.

 

To maintain the Aussie pub tradition a 'beer garden' was designed amongst the peppertrees and gum trees, and sitting next to this is a double pentanque piste. Alongside the piste is a beautiful circular maze kitchen organic vegetable garden and fruit trees. Overlooking the vegetable garden we completely restored a 2 bedroom managers quarters into a self-contained 2-bedroom guest accommodation.
